Easy Crepe Recipe
Easy Crepes
My son after school said, “I’m hungry, what are you feeding me?” After he and my daughter consumed lemon glazed chicken, I suggested Crepes (since we don’t have anything in the fridge at the moment). They both perked up and then I told my son to please get out the flour. He then proceeded to request that I make the crepe into a Mickey Mouse shape. C’est impossible. You can add chocolate syrup or powdered sugar. We were out of powdered sugar, so we opted for the chocolate syrup, super easy and tasty. My daughter who is not a huge crepe fan said, “For me not liking crepes, those were really good!”
2 eggs
1 cup flour
1/2 cup milk
1/2 cup water
2 tbsp melted butter or margarine
Vanilla extract, about a tablespoon and a dash of cinnamon
Mix in a medium size bowl all of the ingredients with a whisk and then place a medium sized skilled on the stove top over medium low heat. Spray with butter flavored spray or add a little olive oil to the pan. Pour the batter in and carefully watch the crepe cook. When it is ready to flip, the sides of the crepe will start to curl, use a spatula to flip over your crepe and in about three minutes voila.
